Chicken of the woods mushroom

Hiking in the New Forest a couple of weeks ago, I stumbled upon this bright orange mushroom growing part way up an oak tree.

What I did not know (until today) is that it’s an edible mushroom known as Chicken of the Woods!

My local grocer tweeted:

1.3 kilo chicken of the woods. We recommend a lot of butter.

So, I grabbed some, asked for some cooking tips and got to work.

The ingredients

  • chopped chicken of the woods mushrooms
  • english rapeseed oil
  • butter (lots of it – the mushrooms soak up a lot of oil and butter)
  • parsley
  • sea salt

In a frying pan, pour in a generous amount of rapeseed oil and heat on high. Once the oil has heated up, throw in the mushrooms. When they start browning, turn the heat down, add the butter and stir. Finally, add in the parsley and salt. Serve with some good bread. Mmmm, delicious.

It tastes a bit like cheese, with the chunkier bits having a more chicken-y taste.
